Yellow Split Pea Dal

This recipe is pretty simple and with just a few ingredients you can have a yummy and healthy dish to fill you up. I had a ton of dried yellow split peas so decided I would try my hand at dal which I have always had with red lentils. Happy to report that it came out really well and everyone in the house gobbled it up.

The best way to approach this recipe is to measure and prep everything right at the beginning so can just add it to the pot in stages. It really makes it so easy and in about an hour you will have a delicious thick pot of split pea dal. Still trying to figure out if it is Dal, Daal, Dahl? So many spellings out there!

This recipe has two parts to it. The first is getting the split peas bubbling away with the baking powder (this helps them to soften up quickly), turmeric, and chopped tomatoes. This cooks for approximately 30 minutes stirring every so often to prevent sticking. The second part is to saute the onions and garlic in coconut oil until they are translucent and soft and then add the spices to cook for a minute. Then you combine the two to finish it off. See I told you it was pretty simple!

You can serve this with rice or vegan naan with some veggies on the side for a delicious, healthy, and filling meal! I hope you enjoy it!
