Oh My Green Dip!

Don’t you just love dips? Before I started eating plant-based I was known as the “dip lady” at all of our family gatherings. There were definitely some favourites that were requested time and time again. I have to admit that I haven’t been asked quite as often as before to bring a dip I think the “vegan” threw them for a loop! For the most part they have been open to trying some of my new creations and some of them have been hits! There are a few of my old crowd-pleasers that I have tried to recreate with plant-based ingredients and some that have inspired new recipes like the ever so tasty Chickpea Curry Dip. There have been some big fails along the way but there have also been some winners and this Oh My Green Dip is definitely a winner!

I try my best to give you recipes that are easy to make, with ingredients that are normally in the fridge or pantry, that are healthy and of course yummy! This dip checks all of those boxes and is chock full of nutritional goodness.

The nutrient-rich avocado which is loaded with heart-healthy fats, high in antioxidants, fiber and potassium give this dip it’s creaminess and adds to the beautiful green colour.

Next up adding super nutritional value and is oh so pretty and green is zucchini which improves digestion, boosts the immune system, can help lower blood sugar levels, supports eye health, is good for weight loss and is also heart healthy.

The superfood spinach is the next main ingredient in this dip. These dark leafy greens are a great source of iron for plant based eaters. They are also important for skin, hair and bone health and provide protein, vitamins and minerals. Are you know seeing why this dip is so beautiful and green?

Artichoke hearts which are full of Vitamin A & C, high in fiber, great for digestion, improve liver function and are even said to be a hangover cure give this recipe a little extra something. You can use marinated artichoke hearts which add some extra flavour or canned artichoke hearts.

Garlic, lemon juice, pink Himalayan salt and freshly ground black pepper round out the ingredients for this recipe. All you need to do is put all of the ingredients into a food processor and pulse to your desired consistency. Some people like chunky dips, some like super silky and smooth and this dip is a great one to make just how you like it.

I am sure you will love this super healthy and tasty dip. You could even get creative and switch out the spinach for another leafy green…kale might be nice! Oh My Green Dip

Ingredients
  

  • 1 Ripe Avocado
  • 1 Large Zucchini chopped
  • 1 Large Handful Baby Spinach
  • 1/2 Cup Artichoke Hearts marinated
  • 2 Cloves Garlic
  • 1 tbsp Lemon Juice
  • 1/4 tsp Himalayan Pink Salt
  • 1/4 tsp Black Pepper freshly ground

Instructions
 

  • Cut the avocado in half, take out the seed and scoop the flesh out and put in the bowl of the food processor
  • Add the chopped zucchini, spinach, artichoke hearts, lemon juice, salt, pepper and pressed garlic to the food processor
  • Turn on the food processor for about 30 seconds.  Stop and scrape down the sides and continue pulsing until desired consistency.  
  • Serve with crackers, chips or veggies.  

Notes

  • I find it best to use a garlic press or quickly chop garlic before adding it to the food processor so you don’t end up with big chunks of raw garlic when making dips.
