Oh My Green Dip

Ingredients
  

  • 1 Ripe Avocado
  • 1 Large Zucchini chopped
  • 1 Large Handful Baby Spinach
  • 1/2 Cup Artichoke Hearts marinated
  • 2 Cloves Garlic
  • 1 tbsp Lemon Juice
  • 1/4 tsp Himalayan Pink Salt
  • 1/4 tsp Black Pepper freshly ground

Method
 

  1. Cut the avocado in half, take out the seed and scoop the flesh out and put in the bowl of the food processor
  2. Add the chopped zucchini, spinach, artichoke hearts, lemon juice, salt, pepper and pressed garlic to the food processor
  3. Turn on the food processor for about 30 seconds.  Stop and scrape down the sides and continue pulsing until desired consistency.  
  4. Serve with crackers, chips or veggies.  

Notes

  • I find it best to use a garlic press or quickly chop garlic before adding it to the food processor so you don’t end up with big chunks of raw garlic when making dips.
