Method
- Cut the avocado in half, take out the seed and scoop the flesh out and put in the bowl of the food processor
- Add the chopped zucchini, spinach, artichoke hearts, lemon juice, salt, pepper and pressed garlic to the food processor
- Turn on the food processor for about 30 seconds. Stop and scrape down the sides and continue pulsing until desired consistency.
- Serve with crackers, chips or veggies.
Notes
- I find it best to use a garlic press or quickly chop garlic before adding it to the food processor so you don’t end up with big chunks of raw garlic when making dips.
