How to Make Almond Milk

Making your own nut milks may seem like a daunting task but it is so very simple! The best thing about making your own milks is that it is healthier than the store bought versions as you know exactly what is going into it. In most cases nuts and water is all you need! You can sweeten it with dates or maple syrup and use this base recipe to get creative and make flavoured milks like vanilla, chocolate or berry!

Making almond milk does take a little bit of planning as the nuts are best soaked in water overnight but if you are in a rush you can quick soak them in very hot water for 2 hours. That is the most difficult part…the planning.

Drain and rinse the nuts with fresh water. Add the soaked nuts to your blender with 4 cups of water, I also like to add a pinch of salt, and blend until super creamy and smooth. This is best done in a high-powered blender and will take about 1 to 2 minutes on high speed. My Vitamix was life changing for me! If you want your milk sweetened or flavoured you could also put the add-ins into the blender at the beginning of the blending process.

All you need to do now is strain that creamy deliciousness through a nut milk bag, cheesecloth, or thin dishtowel.

Don’t discard that leftover pulp! You can use it to make crackers, energy bites and almond flour.

Store your milk in the fridge and use within 3 to 4 days. Store bought almond milk is so convenient but now that you see how easy it is to make your own maybe you will try this method instead!

Almond Milk

Ingredients
  

  • 1 Cup Almonds
  • 4 Cups Water
  • 1 pinch Salt

Optional Adds-Ins

  • 2-3 Dates pitted for sweetened milk
  • 1 tsp Vanilla Extract for vanilla milk
  • 2 tbsp Cocoa Powder for chocolate milk
  • 4 Strawberries for strawberry milk

Instructions
 

  • Soak the almonds overnight in water or in very hot water for 2 hours
  • Drain and rinse the soaked nuts in fresh water.
  • Add the rinsed and drained nuts to your high-powered blender with 4 cups of water and a pinch of salt (if using).  You can also put your add-ins into the blender at this point.  Blend on high speed for 1-2 minutes until it is smooth and creamy.
  • Strain through a nut milk bag, cheesecloth or thin dishcloth.
  • Store milk in fridge and use within 3-4 days.

Notes

Keep the pulp to make crackers, energy bites, muffins, or almond flour.
