Pickled Chickpeas

Ingredients
  

  • 2 Cups Cooked Chickpeas
  • 1 Medium Cucumber seeded and diced
  • 1/2 Medium Orange Sweet Pepper diced
  • 1 Large Tomato diced
  • 1/4 Cup Parsley finely chopped
  • 1/4 Cup Red Onion finely chopped
  • 1 tbsp Capers finely chopped
  • 1 Sliver Scotch Bonnet Pepper finely chopped
  • 2 tbsp Lime Juice
  • 1/2 tsp Himalayan Salt

Instructions
 

  • In a small bowl combine lime juice and salt
  • In a separate bowl combine all of the other ingredients and mix together
  • Pour lime and salt mixture over the chickpeas and stir to combine. Store in the fridge

Notes

If you cannot find scotch bonnet pepper a sprinkle of cayenne pepper works just as well to add the heat needed for this dish.
