Pickled Chickpeas

Ingredients
  

  • 2 Cups Cooked Chickpeas
  • 1 Medium Cucumber seeded and diced
  • 1/2 Medium Orange Sweet Pepper diced
  • 1 Large Tomato diced
  • 1/4 Cup Parsley finely chopped
  • 1/4 Cup Red Onion finely chopped
  • 1 tbsp Capers finely chopped
  • 1 Sliver Scotch Bonnet Pepper finely chopped
  • 2 tbsp Lime Juice
  • 1/2 tsp Himalayan Salt

Method
 

  1. In a small bowl combine lime juice and salt
  2. In a separate bowl combine all of the other ingredients and mix together
  3. Pour lime and salt mixture over the chickpeas and stir to combine. Store in the fridge

Notes

If you cannot find scotch bonnet pepper a sprinkle of cayenne pepper works just as well to add the heat needed for this dish.
